Got this recipe from a friend several years ago.
3 lbs firm eggplant (I used three)
2 medium yellow onions
1/2 head garlic
1 tbsp olive oil
1/2 tsp salt
1 1/2 tbsp tahini or ground sesame seeds
3 tbsp lemon juice
pinch of cayenne
cilantro for garnish

Never tried making this before, but I decided on the first time to try it with soy yogurt… I sort of followed the recipe on the box of the Fantastic World Foods brand falafel mix.

Based on the recipe in Eat to Live by Dr. Joel Fuhrman.
1 can garbanzo beans (reserve liquid in separate container)
1 tbsp tahini or ground sesame seeds
2 tbsp lemon juice
2 garlic cloves

I’ve eaten this salad at other people’s houses but have never made it myself, so I have no idea if I made it “right”, or what it would be called, but it went over well with our guests!

Based on the recipe for Costa Rican Black Bean Soup from Madhur Jaffrey’s World Vegetarian Cookbook, but modified quite a bit to “healthify” it. It’s a little complicated, but worth the effort! It’s one of my favorite soups.
