I had about 2 pounds of carrots in the refrigerator that needed to be used up, so I pulled out this recipe that a friend gave me years ago and I’d never tried before. Now I wonder why I waited so long! Mildly spicy, this smooth and creamy soup has a warm flavor perfect for [...]

Don’t like to eat oatmeal because it’s mushy? Try cooking it the way I learned from my mom.
For one serving,
3/4 c water
3/4 c old fashioned oats
Boil water and add oats. Return to a boil, then turn off the heat. Cover, when the boiling has settled down enough that they won’t boil over, and let sit [...]

This is one of those things I rarely make exactly the same way twice. I got the bare-bones recipe from my mom, and I share how it’s evolved for me with you here. I may use any or all of the vegetables and beans listed below, depending on what’s in my cupboard, refrigerator or freezer [...]

This time-honored recipe cannot be improved upon! It’s a family favorite. Similar to baked beans, it’s a snap to throw together. We usually eat it

Found this recipe online. Couldn’t find the one a friend gave me a couple of years ago. This was good too; I don’t think hers had cumin or soy

I always get compliments on this salad–even from people who don’t really like salad!
romaine lettuce
spinach
green onions, diced
cilantro, coarsely chopped
fresh or canned pears, sliced or diced into large chunks
dried cranberries
pecans (almonds are good too), raw or toasted lightly in the oven for a few minutes
Top with Newman’s Own Light Raspberry Walnut Vinaigrette. I’ve made it without [...]

I’m not going to sugar-coat it, this soup is time and labor intensive. It’s pretty good; my husband likes it. And it makes a lot, so that’s a redeeming quality. But it really takes a lot of work. Here’s what you’re going to need:
a HUGE pot, 12 qts or so
a good blender, food processor or [...]

I sort of made this up, and didn’t measure.
4 apples (I used Golden Delicious)
raw walnuts, finely chopped
raisins
cinnamon
drizzle of agave nectar
tiny pat of margarine
Core the apples and take out the seeds, leaving a hole about 3/4 inch to 1 inch wide. Mix up the walnuts, raisins and cinnamon and stuff into the hole in [...]
