I think I’ve changed this recipe sufficiently over the years to finally claim it as my own, though the original came from my mom. I actually usually make muffins instead of bread, just because they’re easier to make and eat. This is one of my favorites!

This recipe came from the mother of a former roommate. I’ve “healthified” them somewhat, but I’d still like to experiment with making them lower in sodium. In the meantime, here’s my recipe. These are always a hit!

This idea came from a bed and breakfast I stayed in with a friend in the San Juan Islands a couple of years ago, where the host served pumpkin waffles. He showed us the recipe in an old Sunset magazine, and I came home and experimented.

This recipe came from Martha Stewart; I saw her make it on the Today show a few years ago. I’ve always loved butternut squash, but this has become one of my favorite ways to eat it. I’ve reduced the oil she called for, but otherwise it’s pretty much the same.

I got this idea from the restaurant J. Alexander’s. It’s one of their vegetable sides. I don’t know exactly how they make it, but this is how I’ve done it!
