This recipe came from the mother of a former roommate. I’ve “healthified” them somewhat, but I’d still like to experiment with making them lower in sodium. In the meantime, here’s my recipe. These are always a hit!
20 oz frozen chopped spinach
2 c herbed stuffing mix (non-cubed)
1 c parmesan cheese
1 pkg onion soup mix
2-3 cloves crushed [...]

This idea came from a bed and breakfast I stayed in with a friend in the San Juan Islands a couple of years ago, where the host served pumpkin waffles. He showed us the recipe in an old Sunset magazine, and I came home and experimented.
I have yet to find a from-scratch whole wheat pancake recipe I [...]

This recipe came from Martha Stewart; I saw her make it on the Today show a few years ago. I’ve always loved butternut squash, but this has become one of my favorite ways to eat it. I’ve reduced the oil she called for, but otherwise it’s pretty much the same.
1 large butternut squash
salt & pepper
1 [...]

I got this idea from the restaurant J. Alexander’s. It’s one of their vegetable sides. I don’t know exactly how they make it, but this is how I’ve done it!
1 spaghetti squash
salt
pepper
olive oil
tomato sauce
shredded parmesan cheese (optional) or finely chopped pine nuts (optional)
Cut spaghetti squash in half lengthwise and scoop out seeds. Place cut side [...]

This was one of my most favorite meals when I worked at the Lifestyle Center of America. I made it a week or two ago and still liked it!
Beans
3 c cooked red kidney beans
1 tbsp olive oil
1/2 of a medium onion, diced
1/4 of a green pepper, diced
1 or 2 cloves garlic, minced
1/2 c chunky tomato [...]

First I noticed fatigue and a general lack of physical and emotional energy this summer. Most days by dinnertime I hardly had the energy to stand, and the only thing my brain could handle doing after dinner was vegging out in front of the TV. But I dismissed it as seasonal allergies, because last year [...]

This is another one of those family favorites that can’t be improved upon! Oh, I “healthify” it a bit when I make it, but I’ve never found any way to make this better. We usually eat this for Sunday morning breakfast. Used to be with scrambled eggs and some vegetarian “sausages”, but I also like [...]

I won’t claim that these are authentically Mexican, but they satisfy my craving for Mexican at home. I made them in the crockpot this time, but I’ve also cooked them on the stove many, many times. Here are directions for both.
3 c pinto beans, rinsed and picked over
1 medium onion, diced
4 or 5 cloves garlic, minced
1 [...]

Breakfast
2 pieces of Ezekiel Sesame bread, toasted, with Earth Balance margarine, and one with fresh ground peanut butter, the other with Smucker’s Simply Fruit seedless blackberry jam
~3/4 c Un-Mushy Oatmeal with ~1 oz raw walnuts and Silk brand vanilla soymilk
I never got hungry for lunch, probably because I ate more for breakfast than usual, or [...]
