I know I already have a recipe on here for lentil soup with coconut and spinach, but this one is actually quite different. For one thing it uses red lentils instead, but the taste is also different–more curry, while the other one is more cumin-y. My husband and I really liked this one. I found [...]

Again thanks to Facebook, I got this recipe from another childhood friend. I love butternut squash in any form, so of course it caught my attention when she mentioned it. This chili is sooo good. I ate it over cornbread.
1 lg butternut squash, peeled, halved, seeded, and cut into 1-inch cubes
2 zucchini, diced
1 or 2 [...]

Got this recipe from the squash display at the grocery store. I didn’t follow the recipe exactly, so here’s my adaptation. It’s still fairly high in fat, so I use it more for a special occasion type dish. But, a good way to work a vegetable in to that special occasion. I love it, and [...]

Microbes live in our intestines, helping us to digest foods that we can’t digest on our own. A recent experiment revealed that what we eat influences what kind of microbes become dominant in our intestines, and therefore, what we get out of our food.
Researchers used microbe-free mice [...]

I made an exciting discovery last night. I replaced the bananas in my banana bread recipe with pumpkin and voila! Pumpkin bread! I’ve always wanted a good recipe for pumpkin bread. I’ve only eaten one slice so far, but I think this will be it!
2/3 c honey
1/2 c unsweetened applesauce
1 c pumpkin
2 tbsp ground flaxseed
3 [...]

I think I’ve changed this recipe sufficiently over the years to finally claim it as my own, though the original came from my mom. I actually usually make muffins instead of bread, just because they’re easier to make and eat. This is one of my favorites!
2/3 c honey (replaced the sugar in the original recipe)
1/2 [...]

This recipe comes, thanks to Facebook, from a gradeschool friend. Made it last night for some friends and they all liked it. I’ll be making it again. Probably soon.
1/4 c olive oil
1 pkg extra firm tofu, cut into small cubes
1 lg onion, diced or thinly sliced
1/4 c brown sugar
2 or 3 bell peppers, [...]

I know, that sounds like an oxymoron, but what else would you call them?
I made these for the first time for my husband’s birthday a couple of weeks ago. They went over well. (In fact I’m posting the recipe now because my mother-in-law asked for it!) I used a recipe from a friend [...]
