Pumpkin Bread
I made an exciting discovery last night. I replaced the bananas in my banana bread recipe with pumpkin and voila! Pumpkin bread! I’ve always wanted a good recipe for pumpkin bread. I’ve only eaten one slice so far, but I think this will be it!
- 2/3 c honey
- 1/2 c unsweetened applesauce
- 1 c pumpkin
- 2 tbsp ground flaxseed
- 3 tbsp soymilk
- 1 c whole wheat flour
- 1 c white flour
- 1/2 tsp salt
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp cloves
- 1/2 tsp nutmeg
- 2/3 c chopped raw walnuts (optional)
Mix ingredients in order. Grease and flour one large bread pan. Pour batter into pan and bake at 350 degrees for one hour.
For muffins, grease muffin tin, or use muffin papers, and bake at 350 degrees for 30-35 minutes.
