Kale Salad
This is about the only way I can stand to eat kale. They used to make this recipe at the Lifestyle Center of America, and I absolutely love it.
For the dressing:
- 2 1/2 tbsp lemon juice
- 1 tbsp Bragg’s liquid aminos
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1 1/2 tbsp water
- 1 1/2 tsp olive oil
Blend these ingredients well in a blender, or shake in a closed jar.
For the salad:
- 1/4 c sliced black olives
- 3 c fresh kale, finely chopped
- 2 green onions, chopped
Mix well with dressing and marinate 1 hour. Just before servign, add
- 2 1/2 tbsp raw sunflower seeds
- 1 roma tomato
- 1/4 of a red pepper
