Walnut Maple Cookies
These are soooo good! The original recipe, from Depression, The Way Out by Neil Nedley, M.D., calls for carob chips, but I’m not crazy about carob. They make about the best chocolate chip cookies I’ve ever had. This time though I made them with dates.
- 2 1/2 c raw walnuts, finely ground in a food processor
- 2/3 c whole wheat flour
- 1 tsp salt
- 1/3 c ground flaxseed
- 1/3 c carob chips, chocolate chips, raisins, dried cranberries or chopped dates
- 1/2 c + 2 tbsp maple syrup
- 2 tsp vanilla
Mix ingredients in order. Drop by spoonfuls onto greased cookie sheet. Bake at 350 degrees for 10-15 minutes or until golden brown. Check often to prevent burning. Let cool slightly before removing from the cookie sheet. Makes one dozen.
